This is another of my personal favorite meals. I mean, tomato and meat sauce, pasta, and loads of gooey cheese - what's not to love? I got both my own love of it and the recipe from my paternal grandmother. I have absolutely no idea where she got the recipe (she definitely didn't come up with it herself; she was not what you could even vaguely call 'creative' in the kitchen), nor the name, which is bizarre to say the least.
Ingredients:
1 1/2 - 2 lbs ground beef
2 cloves garlic, minced
1 lg onion, minced
2 tbs cooking oil
1 8oz can tomato sauce
1 19oz can stewed, diced, or crushed tomatoes (I usually do one stewed and one crushed in a double batch)
1 1/2 tsp salt
1/4 tsp pepper
1 Tbs sugar
1 1/2 tsp oregano
1 tsp basil
1 8oz pkg elbow macaroni
1/2 lb mozzarella, sliced thin
1/2 c grated Parmesan
Directions:
- Brown onion lightly in the oil, just past translucent
- Add garlic until aromatic, then add beef and brown thoroughly
- Add tomato sauce, tomatoes, and seasonings
- Cover and simmer for about 20 minutes. While simmering, cook macaroni (to barely al dante - they should be fairly chewy! They will finish cooking in the casserole) and drain well.
- Arrange layers of cooked macaroni, meat, mozzarella, then paremsan in a large casserole dish (2-3 layers each, ideally.)
- Bake, covered, at 375 for 25+ minutes. Cheese should be melted and bubbly and just starting to brown at the edges.
