Slow Cooker Simplicity Ham and Potato Casserole

This is a slow-cooker version of one of my favorite meals as a child, my grandmother's Ham and Potato Casserole.  It's an exceedingly simple meal, more so even than the original already simple recipe, but the taste is wonderful.  Just perfect for a cold winter day!








Ingredients: 

  • 2 c. sliced pre-cooked ham (roughly; about two half-inch-thick slices from a whole ham)
  • 5-8 red potatoes, sliced into 1/2 inch rounds
  • 1 can cream of mushroom soup
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp allspice
(spice measurements are approximate; I just sprinkled a light layer on the sliced potatoes)

Directions:

  1. Season potatoes and place in slow cooker.  Dot with about half the soup, then layer the ham.  Dot with remaining soup, and a light sprinkle of allspice.
  2. Cook on high about 4-5 hours.
