This was amazingly tasty, and had me drooling in anticipation all afternoon — it smells divine while cooking! It's also quite filling; we were each happy with a 1/2 chicken breast portion, served with lemon-butter dressed steamed broccoli.

Slow Cooker Bacon Ranch Chicken
This was incredibly delicious! It was a bit on the salty side, though. I found a recipe for making your own ranch dressing mix, and I am planning to make my own, with much less salt. In the meantime, I just added more sour cream and that improved the overly saltiness.

Slow Cooker Honey-Butter Chicken Bake
This is probably my favorite of the slow cooker meals we've done so far. The seasoning is amazing – I was afraid I wouldn't like it because of the honey, but it isn't overpowering at all.
For a freezer-to-crockpot version, I would probably use small new potatoes whole (potatoes can go icky in the freezer if cut and not covered with sauce), and would package the chicken and veggies separately, since they are seasoned differently.

Slow Cooker Chicken Cacciatore with Zuchini
As seems to be somewhat the theme of these freezer-to-crockpot meals, this one was a bit bland as I found it; I had to work with it to make it my own and suited to our tastes. However, it's delightfully simple yet healthy, hearty, and delicious. It would be easy to add in any additional vegetables that your family prefers or which are in season.

Crockpot Salsa Chicken
When I first found the base for this recipe, I was rather skeptical, as it frankly sounded too simple to really be much good. But, I gave it a shot. The smells as it was cooking were amazing. As I scooped it out, I got skeptical again - it certainly didn't look appetizing. However... the taste absolutely won me over! This is definitely getting added to the regular household menu, especially how easy it is to keep 'on hand'.

Indian Chicken Curry Recipe
Wonderfully Seasoned Curried Chicken from India
This is a spicy and delightful chicken curry dish from India, usually served over rice.
This recipe for Indian chicken curry is actually surprisingly easy to prepare; most of the preparation involves measuring and grinding spices, and the cooking, although it requires some amount of time, requires little attention.
Like most Indian food, it is quite spicy, which can be moderated by reducing the amount of chili powder. But, also like most Indian dishes, it has a subtle array of flavors which has been very appropriately compared to a symphony for the taste buds, as opposed to Western recipes, which may contain only one or two seasonings, if any at all besides salt or pepper.
This chicken curry is generally served with rice. Optionally, it can also be served with plain yogurt, which can cut down the heat factor considerably for those who aren't quite up to eating such spicy foods.
It also keeps well in the refrigerator for up to a week or so.

Lemon-Pesto Chicken
This recipe was inspired by my AeroGarden, as a way to use the profusion of fresh lemon basil I had on hand. I used all three kinds of basil in the Gourmet Herbs seed kit; approximately 5 parts lemon basil, 2 parts globe basil, and one part sweet basil.
Ingredients:
- 1 c. fresh lemon basil, finely cut (or regular basil, along with the juice and zest of half a lemon)
- 1 large onion, chopped
- 1 lb. chicken (tenders or boneless breasts)
- 1 lb. fresh spinach
- 2 16 oz. can of mushrooms (pieces and stems)
- 3 tbs. butter
- 3 tbs. flour
- 3 c. milk
- 1-2 Tbsp. oil
- 1/2 tsp. dry or 1 tsp finely cut fresh thyme
- 1/4 tsp. dry or 1/2 tsp finely cut fresh oregano
- 1/4 c. fresh finely cut parsley
- 2 cloves fresh garlic, finely chopped
- salt & pepper to taste
- 1 lb. package wide egg noodles
