This was amazingly tasty, and had me drooling in anticipation all afternoon — it smells divine while cooking! It's also quite filling; we were each happy with a 1/2 chicken breast portion, served with lemon-butter dressed steamed broccoli.
Ingredients:
- 3 boneless skinless chicken breasts, cut in half
- 1 can cream of chicken soup
- 1 c milk
- 4 oz sliced ham
- 4 oz sliced Swiss cheese
- 1 (8 ounce) package herbed dry bread stuffing mix
- 1/4 cup butter, melted
Directions:
- Mix soup and milk in a small bowl.
- Pour just enough into crockpot to cover the bottom.
- Arrange chicken in a single layer (or as close to it as possible) in the slow cooker.
- Lay out ham and then cheese slices on top of each piece of chicken. Depending on size and thickness of your slices, you may need to use half pieces, or double up. In mine, for instance, I will from now on use two ham slices (small, thin slices), but the cheese is good at one slice.
- Pour on remaining soup mixture, covering well.
- Sprinkle stuffing mix evenly over the top, then drizzle as evenly as reasonably possible with butter.
- Cover and cook on low 4-6 hours, or high 2-4 hours. Do not stir or even uncover (if you can resist – I had to take one quick taste...)
