This is a recipe I actually made up on the fly this morning! Yesterday I made a large batch of Thieves' Oil Concentrate, and it smelled so very delicious, that today I used the basic ingredients as the foundation of this recipe... and it was every bit as delicious as it smelled!
Ingredients:
Roast- 1/2 tsp cinnamon
- 1 tsp whole cloves
- 2 tsp rosemary
- 2 Tbs lemon juice
- Zest of one lemon
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 pork roast (approx 2-3 lbs)
- 2 Tbs cornstarch, dissolved in 1 c cold water
Vegetables
- 5 to 6 small red potatoes, cut into 1-2 inch cubes
- 1 medium onion, cut into 1-2 inch pieces
- 1 green bell pepper, cut into 1-2 inch pieces
- 1 Tbs paprika
- 2 tsp parsley
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Directions:
- If freezing, combine roast ingredients in ziploc and freeze, then thaw in refrigerator for a day before cooking. Prepare vegetables just before cooking.
- Place roast and roast seasonings in crockpot.
- Toss vegetables and vegetable seasonings with a drizzle of olive oil. Place in crockpot around roast.
- Cook on low for 7-9 hours, or on high 4-5 hours.
