Slow Cooker Thieves' Pork Roast

This is a recipe I actually made up on the fly this morning!  Yesterday I made a large batch of Thieves' Oil Concentrate, and it smelled so very delicious, that today I used the basic ingredients as the foundation of this recipe...  and it was every bit as delicious as it smelled!





Ingredients:

Roast
  • 1/2 tsp cinnamon
  • 1 tsp whole cloves
  • 2 tsp rosemary
  • 2 Tbs lemon juice
  • Zest of one lemon
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 pork roast (approx 2-3 lbs)
  • 2 Tbs cornstarch, dissolved in 1 c cold water

Vegetables
  • 5 to 6 small red potatoes, cut into 1-2 inch cubes
  • 1 medium onion, cut into 1-2 inch pieces
  • 1 green bell pepper, cut into 1-2 inch pieces
  • 1 Tbs paprika
  • 2 tsp parsley
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste


Directions:

  1. If freezing, combine roast ingredients in ziploc and freeze, then thaw in refrigerator for a day before cooking.  Prepare vegetables just before cooking.
  2. Place roast and roast seasonings in crockpot.
  3. Toss vegetables and vegetable seasonings with a drizzle of olive oil.  Place in crockpot around roast.
  4. Cook on low for 7-9 hours, or on high 4-5 hours.
